Ingredients

35ml El Rayo Plata Tequila

15ml Ojo de Dios Joven Mezcal

15ml La Tomato Liqueur

15ml Lime Juice

5ml Sugar Syrup

2 dashes of Saline

1 thin disc of Fresh chilli

Franklin & Sons Pink Grapefruit Soda

Garnish: Tomato Leather

A new bar has opened in Harrogate’s Little Ale House. Over & Above opened its doors just this year and is the latest project of owner Rich Hamer. The bar intends to offer “neighbourhood friendliness with upmarket serves, including twists on classics and seasonal drinks”.

The bar plans to host events, masterclasses, and private hires, with ambitions to feature takeovers from renowned UK bars, bringing their teams and menus to Harrogate.

To celebrate their opening, Hamer has shared his Greenhouse recipe with us.

Method:

Muddle the chilli with the sugar syrup

Add all other ingredients, except the pink grapefruit soda, and shake

Double strain over ice spear and top with Franklin & Sons pink grapefruit soda.

Tomato leather method:

Dehydrate tomato puree seasoned with dried basil, dried oregano, garlic powder and Maldon sea salt.
