Ingredients

315ml Ardbeg Wee Beastie

315ml Giffard Banane du Brésil

130ml Amaro Montenegro

130ml Frangelico 

105ml Freshly Squeezed Lime Juice

315ml Whole Milk

The bar says about the drink "Chiaroscuro is an artistic technique focused on the dramatic interplay of light and shadow. Artists use strong contrasts between brightness and darkness to create a sense of volume, depth, and even emotional intensity.

We translate this concept into a cocktail by introducing the contrast of flavours between smoke and milk, also using milk clarification to add depth and texture to the drink and ultimately turn something considered ‘dark’ into a bright and approachable, and yet very complex serve."

Method:

Mix the first 5 ingredients together

Pour whole milk into the mixture.

Dropping the ph of the milk will cause its proteins, which are predominantly whey and casein, to unwind and unfold, now free to bind together in a way they would not do before, forming clumps of curdled milk.

Refrigerate for at least a couple of hours (ideally overnight), and run through a coffee filter, chinois, mesh bag or muslin cloth (they all yield the same results as it’s the curds doing the actual filtering).

Collect and measure the liquid yield, add 1/13 of Ardbeg Wee Beastie and Amaro Montenegro back into the mixture, mix well and bottle.

To serve, pour 70 ml over ice in a mixing glass or tin and briefly stir before pouring over a large ice block in a rocks glass.

Garnish with a banana leaf.
