- 2023 One to Watch
Owned by brothers Aaron and Callum of Zymurgorium Group this bar is situated in Manchester’s Bonded Warehouse and is kitted out with its own distillery. The bar was originally built almost three years ago but plans were halted due to COVID but the wheels were put in motion and the bar opened its doors in October 2022.
The opulent interior oozes personality with the theme of birds running throughout the venue and if even reflected in the drinks offering. The vision for the bar was to go back to the root of good drinking and to provide customers with a space where people can indulge and be surrounded by a touch of luxury. The bar even boasts its own Absinthe parlour.
General Manager Adam Taylor says they ‘want to use really special techniques and ingredients whilst keeping everything approachable.’
Drinks are easy to understand with complex layers of flavours, with each serve on the current menu based on a bird. The Wake, for instance, is inspired by vultures and includes mezcal, prickly pear, rooibos tea and electric bitters – the feature of traditional ingredients found throughout the plains of Africa where these birds reside.
The team are all well-trained and fully educated on the flavour profiles of the drinks. If you’re usure of what to choose, rest assured you’re in friendly and capable hands. The menu has been lovingly curated as a team effort with Adam utilising the menu design skills he’s developed over the last six years.
This bar is certainly going places and is a worthy winner of 2023’s One to Watch.
