Just a mile from St Ives, Ugly Butterfly is situated in a scenic Cornish Atlantic setting. The bar looks out across the spectacular Carbis Bay. It’s part of Adam Handling’s restaurant of the same name.
At the site, bartenders work with the kitchen team to reduce waste by unlocking flavour potential within food waste in such ingredients as offcuts, peels, skins, stems and trims to create cocktail ingredients and garnishes for drinks.
The list of 12 cocktails includes the Why Mai Tai, which combines Bacardi Ocho 8yo wasted orange liqueur with fake lime, orgeat, ginger and saffron extract. This is the perfect choice for someone partial to sour, spicy and velvety flavours.
There’s also the £20 Homage to Frog, which is seasonal, lush and green. This drink mixes Tanqueray No.Ten with pea pod liqueur, Irn Bru saline, Noily Prat vermouth as well as Adam Handling’s English sparkling wine & nettle and apple sorbet.
